Tropical Dried Mango Power Salad

Ingredients (Serves 2–4)
For the salad:
- 3 cups mixed greens
- 1 ripe avocado, diced
- ½ red bell pepper, sliced
- ¼ red onion, thinly sliced
- ½ cup cucumber, chopped
- ½ cup Peeled Snacks Organic Dried Mango, chopped
- ¼ cup toasted cashews
For the cilantro lime dressing:
- ¼ cup olive oil
- Juice of 1 lime
- 1 tablespoon honey or maple syrup
- 1 tablespoon chopped fresh cilantro
- Pinch of sea salt
- Fresh cracked black pepper
Instructions
- In a large bowl, combine mixed greens, avocado, bell pepper, red onion, and cucumber.
